Fight scenes are extremely difficult, at least for me, because you have no visuals to go by. So, This thread is to help out people who have reached this difficult part.
I start us off with this simple request:
In my writing, a girl becomes stalked and is given a collection of knives to help defend herself. The only familiarity I have with knife work is to cutting up food for cooking. Can I get some help?

She could swipe at the guy? I guess it would depend on how well she can handle the knives -- is she given brief "stab them with the pointy end" instructions, or does she learn how to use them (ex: where to stab, how to hold the knife, etc.)?

Are you going for Rule of Cool, or something more realistic?
For the former, just do what you think is cool, yet still believable to most audiences (like how most sword fights are in movies). For the latter, then watch the video that the above poster embedded.

Are you going for Rule of Cool, or something more realistic? For the former, just do what you think is cool, yet still believable to most audiences (like how most sword fights are in movies). For the latter, then watch the video that the above poster embedded. Well, the girl gets a short dagger, too small for sword fighting. And also, her stalker eventually comes at her... packing heat. Any advice on how to escape bullets other than "Run and hide" ?

Check out the video I posted, the guy who did that has a video on how to defend yourself against a gun using a knife.

Funny enough, defending yourself in hand-to-hand combat when your enemy draws a knife is a big part of Krav Maga. More research into the topic might be appropriate. Maybe even see if you can contact a Krav Maga instructor and ask him to share with you some tips and advice. The videos above might actually be Krav Maga. I don't know enough about the style to recognize it on sight.

First rule of knife fighting: You ARE going to get cut.
Know this rule. Remember this rule. Live by this rule.
As for taking on a man with a firearm, there's a simple rule.
A man with a knife can beat a man with a firearm if the man with the firearm lets him get within reach.
Her best bet? Move in fast and hard, or get out of the way so he has to come to her.
If he comes around the corner, the best bet is the tried and true tactic of stepping up into him, putting the knife at an upward angle just under the sternum, then twisting.
Once she gets on him, don't have her stop. Have her keep stabbing the chest until he stops moving and shits himself. The knife, if serrated, can get hung up on the ribs. Don't have her do anything fancy. Spinning it, tossing it from hand to hand, all that stuff is bullshit.'
Feet shoulder width apart and slightly open front to back. One hand in a fist up by the chin, the other with the knife down by the sternum with the blade pointed downward.
Stab in the upper left of the chest in a downward motion, take him to the ground with you.
Finish him.
It's fairly easy.

Oh, and contrary to popular belief, knife victims scream a LOT. They gush blood everywhere, and if it goes on long enough, they beg you to stop.
Don't have her let up. If she does, she's dead.

An Unarmed man takes on the gunman. The Unarmed guy has absolutely no training in any sort of martial arts or self-defense. However, the gunman still has a knife imbedded in him from the female, she accidentally left it in there to try and run. Should the unarmed man try to grab the knife and do more damage, or just try to restrain the guy with the gun?

First off, you need to get a grasp of what the knife has stuck itself into, how long your gunman has to live depends on whether or not it has hit an organ, how deep it sank in. Loss of blood becomes fatal at the 2 litre mark (we have five in our body at any one time). If it hit a lung, blood would be flowing into it as well, and he'd be coughing it up as a result.
Either way, it might be of note to get the gun out of the guy's hand. Since it's the greater danger to the newcomer rather than the knife. Removing the knife is only going to kill the man faster since it's acting like a plug. And keeping the blood in.
