What is Bella's relationship with Carlisle? I mean, does she see Carlisle as the father she never have (yes I know about Charlie!)? Does she respect him? Or is she just dazzled by his goodness and vampireness?

I'm inclined to think that, although the respect bit may be debatable, you're right on pretty much every other count.
Basically, whereas Charlie is the father that Bella has in "real life", Carlisle represents the father she wants to have. None of the things that Bella disdains or dislikes about Charlie* are ever an issue with Carlisle, and that coupled with the standard "OMG THE CULLENS ARE SO FREAKIN' PERFECT" spiel means that Bella essentially sees Carlisle as the perfect father figure, even though Carlisle's actual parenting skills are questionable at best.
*Making time for her during her visits to Forks, being firm enough to ground her after she snuck away to Italy without telling him, disapproving of her relationship with Edward (esp. after her depression/catatonia after Eddie dumped her), and so on and so forth.

I'd say there's a respect for Carlisle Bella doesn't have for Charlie, probably due that he is what she wants to be. Bella for the most part barely respects Charlie and complains a lot, for goodness sake she somewhat block fishing trips out of her mind because they are 'horrible'.
While there's none of the bs attitude she has towards Charlie on her end with Carlisle.
